Chicken & Mushroom Risotto - TastyPlanner.com

Ingredients
4 chicken breasts
75 grams butter
275 grams Arborio rice
150 grams mushrooms
1 litre chicken stock, simmering with a ladle handy
1 onion, finely chopped
3 cloves garlic, finely chopped
150 ml white wine
2 tbsp olive oil
2 tbsp Parsely
4 lemon wedges
Instructions
Heat oven to 190 degrees C. Put chicken breast on an oven tray, brush with butter, season with salt and pepper, and bake in the oven for 20-30 minutes.
Melt butter in pot and cook onion, garlic and parsley for 5 minutes until onions are clear.
Add the rice, stirring well so that the rice is coated in with the onion and oil mixture. Add the white wine and mushrooms, stirring on a high heat until most of the wine is absorbed.
Add 1 ladle of stock into the rice, stirring until it is absorbed. Continue adding stock, 1 ladle at a time until the stock is used and the grains are tender.
Stir in some butter and parmesan just before serving. Serve onto plates. Chop the chicken breasts into strips and place on top of the risotto. Top with parmesan.
Serve with lemon wedges on the side.
