Chicken Paillard on Baby Greens - TastyPlanner.com

This is one of my good friends favorite recipe.
Ingredients
8 chicken breast cutlets
olive oil
4 sprigs fresh thyme
2 tbsp. parsley
1 Lemon
salt and pepper
2 tbsp. butter
2 tbsp. flour
2 cups chicken broth
1 bag mixed baby salad greens
Instructions
Preheat a large nonstick skillet over medium-high heat. Arrange the chicken in a shallow dish and drizzle with olive oil to coat. Zest the lemon, combine with chopped herbs, and sprinkle over the chicken. Season with salt and pepper.
Rub the chicken to coat evenly with the herbs and seasonings. Transfer chicken to the skillet in a single layer and cook for 3 minutes on each side. Remove and cover with foil to keep it warm.
Heat another pan and add butter. When the butter melts, add flour and cook, stirring with a whisk, 1 or 2 minutes to make a light roux. Whisk in chicken broth and when it thickens, remove pan from heat.
Toss salad greens with lemon juice, salt and olive oil.
To serve, cover the bottom of a plate with the sauce, and top with greens and grilled cutlets.
