Chicken Rice Broccoli Casserole - TastyPlanner.com

Great dish for 2 to 4 people.
Ingredients
2 cups cooked boneless skinless chicken breast (approximately 3)
1 box Uncle Bens long grain and wild rice (fast cook)
1 bag frozen broccoli
1 can 98% fat free cream of chicken soup
1 can cheddar cheese soup
1 soup can milk
1 bag chow mein noodles
Instructions
Boil chicken and cut into small pieces. Prepare rice by directions and let stand 10 minutes. Mix rice with both cans of soup and milk. Prepare broccoli according to directions.
Pour half of rice mixture into bottom of casserole pan. Next add chicken and broccoli layer. Cover with rest of rice mixture.
Bake at 425 degrees for 30 minutes. Take out of oven and cover with chow mein noodles and bake an additional 10 minutes.

I give it 4 stars with a few changes. I couldn’t find just cheddar cheese soup, but I did find Campbell’s nacho cheese soup, which sounds weird, but made it so good! Gave it some flavor, although my husband still found it a bit bland (I did not). Also I guess this would be obvious to most people, but I recommend only covering the top with chow mein noodles for the part you’re going to eat immediately. They get soggy when the casserole is kept for leftovers. I also might try French Fried Onions as a topper next time. The long grain wild rice was a good call. With only 2 of us eating, we had enough for like 2 dinners and 2 lunches.
