It’s a new twist on taco salad.
Ingredients
Lettuce
2 cans MexiCorn
2 cans black beans
1 can Enchillada Sauce
1 lb. Diced Chicken
Tortilla chips
sour cream (optional)
Shredded Cheese (optional)
Salsa (optional)
Instructions
Preheat oven to 350 degrees.
Saute chicken with garlic powder, salt, pepper, and paprika.
Mix beans, corn, chicken and enchillada sauce.
Pour in baking dish. Cook for 25 minutes or until warm.
Crush tortilla chips into bowl, add lettuce and baked chicken mixture. Add sour cream, salsa, or cheese if desired.
