CURVES PHASE 1 – higher protein dinner
Dinner Goals: 30g carbs / 45g protein / 11g fat / 400 calories

1 cup diced onion
6 clove garlic, minced
3 t cumin
12 T oil
2 1/4 lb chicken breast, cubed
1 1/2 cup salsa
12 cups reduced sodium chicken broth
3 cup mushrooms
1 1/2 cup corn
6 T lime juice
Saute onion, garlic and cumin in oil in a large saucepan until the onion begins to soften. Add chicken and salsa and cook for 2 minutes. Add broth, mushrooms, corn and lime juice to the pot. simmer until the chicken is cooked through. Add sliced jalapenos for extra heat.
