Creamy, savory wild rice soup
Ingredients
2 Tbsp butter
1 onion, chopped
2 stalks celery, chopped
2 carrots, chopped
3 garlic cloves, minced
1 cup wild rice, rinsed
8 cups chicken stock
1 bay leaf
1 tsp poultry seasoning
1 1/2 cups heavy cream
1/4 cup flour
3/4 cup water
2 cups cooked chicken, cut into small pieces
Salt and pepper to taste
Instructions
Melt butter in a large pot over medium heat. Add onion, celery, carrots, and garlic and saute until onion is translucent.
Add the rice and stir to coat. Add chicken stock, bay leaf and poultry seasoning. Bring to boil, then reduce heat to low and simmer for 1 hour, or until rice is tender, stirring occasionally.
Add the cream and bring back to boil. Mix flour and water in shaker cup and shake until smooth with no lumps. Stir flour mixture into soup and cook, stirring constantly, until thickened. Add the chicken. Stir well and allow to heat through. Season with salt and pepper to taste.
