chicken with chipotle-pomegranate sauce
Ingredients
3/4 cup fresh orange juice, divided
1/4 cup Champagne
2 tbsp fresh lemon juice
3 tbsp olive oil, divided
2 cloves garlic, minced
1 shallot, minced
1/2 tsp salt
1/4 tsp pepper
1 lb boneless, skinless chicken breasts
3/4 cup pomegranate juice
2 tsp chipotle in adobo
Instructions
In medium bowl combine 1/4 cup orange juice, Champagne, lemon juice, 1 tbsp olive oil, garlic, shallot, salt and pepper.
Cut chicken into 1" cubes and add to bowl; pour all into resealable plastic bag.
Refrigerate 2 hours.
Remove chicken from marinade; discard marinade.
In small saucepan combine remaining orange juice with pomegranate juice.
Bring to boil; reduce to 3/4 cup, about 10 minutes.
Let cool.
Stir in chipotle.
Heat remaining oil in large skillet over medium-high heat.
Add chicken; cook 4-5 minutes or until cooked through.
Place on platter.
Spear chicken with skewers; serve sauce on the side.
