Chickpea Curry - TastyPlanner.com

The spices in this curry are added individually, so it can easily adjust to your taste. A great combination of spicy and sweet, as well as vegetarian and reasonably healthy.
Ingredients
4 cups water
3 cubes vegetable bouillon
1 cup raisins
1/4 cup olive oil or just enough to saute onions
2 onions, chopped
1 tablespoon minced garlic
2 tablespoons minced ginger
2 cinnamon sticks
6 whole cloves
1 teaspoon cayenne pepper
2 teaspoons ground turmeric
2 teaspoons ground coriander
2 teaspoons ground cumin
19 oz) cans chickpeas
1 medium yam or sweet potato, peeled and diced
3 carrots, chopped
1 tsp. salt, or to taste
1 Tbsp. cilantro, chopped (optional)
Instructions
1. Chop carrots and yam and set aside.
2. Place water, bouillon cubes, and raisins in a medium saucepan over high heat. Bring to a boil, and simmer until bouillon cubes dissolve.
3. Heat olive oil in a large saucepan. Add onion, garlic, and ginger. Cook and stir until onion has softened and turned translucent, about 5 minutes.
4. Add cinnamon sticks, cloves, turmeric, cayenne, coriander, and cumin. Cook for about 3 minutes until fragrant, stirring constantly.
5. Stir in chickpeas, yam, and carrots; Pour in hot vegetable stock and raisins. Bring to a simmer, then reduce heat to medium-low, cover, and simmer until the vegetables have softened and the sauce has thickened, about 1 hour.
