Easier than chili rellenos. All of the flavor, none of the work.

Ingredients
corn
eggs
cream cheese
canned whole peppers
can diced peppers
chili powder
cheddar cheese
Instructions
Stir chili powder and diced green peppers into cream cheese to taste.
Open up whole chili can and drain. Slice peppers lengthwise and flatten out.
Spoon cream cheese mix onto pepper skins and then re-roll them into a pepper shape. Place peppers in a casserole dish.
Pour cooked corn on top of chilies and fill in gaps with corn.
Wisk eggs with any desired additional spices. Pour egg mixture onto corn and peppers until everything has some egg on it.
Sprinkle cheese on top to taste and bake at 350 for 20 min.
Sorry I don’t have measurements for the ingredients. I usually make this from memory. I like to make about 3 chilis a person and I usually add one egg per two chilis. Serve with rice and beans for a complete meal.
