This is a version of an old favorite

Ingredients
2 14oz Cans Beets, Drained
1 small onion, chopped
1 Clove garlic
4 Cups vegetable stock
2 Cups non-fat sour cream
.5 Cup chopped fresh dill
.5 tsp black pepper
.5 tsp dried basil
Instructions
In a food processor, combine beets, onion, garlic, stock, sour cream, dill, pepper and basil; puree until nice and smooth. Chill in the refrigerator for at least 1 hour before serving.
Substitute parsley for dill
