Chinese Ginger Beef - TastyPlanner.com

I was looking for a quick dish to make for an impromptu Olympics opening ceremony party. I found this one online but made a few adjustments to suit what I had in the house. Quite yummy!

Ingredients
½ kilo beef stroganoff (that's what our butcher calls it, basically sliced or cubed beef)
¼ cup of soy sauce
¼ cup of sherry
¼ cup seasoned verjuice or rice vinegar
Fresh ground black pepper
1 teaspoon of sugar
2 cloves garlic (minced)
1 medium onion (chopped in large-ish chunks)
1 large pak choy (chopped roughly)
1 bunch broccolini (sliced diagonally in 2-inch pieces)
2 Tbsp Peanut Oil
1 teaspoon ground ginger
2/3 cup Beef Stock
2 Tbsp of cornstarch
1½ tablespoons oyster sauce
Instructions
Combine soy, sherry, verjuice, pepper, sugar & garlic and marinate the beef in this mixture while preparing the other ingredients or for half an hour.
In the meantime, chop onions, pak choy, & broccolini.
Heat oil in wok. Add beef and ginger to wok, reserving marinade. Stir fry for 3-4 minutes until beef is browned on the outside. Add onions, pak choy, broccolini and beef stock. Push vegetables to the walls of the wok, cover with lid, and steam until you see wisps of steam outside the lid.
Add oyster sauce and cornstarch to reserved marinade. When vegetables are finished steaming, add marinade to wok and heat for 2-3 minutes or until sauce is thickened.
Serve over white rice.
