Ingredients
3 T. vegetable oil, divided
3 boneless, skinless chicken breast halves, cut into strips
1 onion, chopped
1 1/2 c. mushrooms, sliced
1/4 c. dry sherry
4 T. soy sauce
3 cloves garlic, pressed
6 c. cooked brown rice
1 c. green onions, chopped
1 1/2 c. green peas, frozen
2 T. dark sesame oil
Instructions
In a skillet, heat 1 T. of the oil in a skillet over medium high heat. Add chicken and cook, stirring occasionally. Add chopped onion and cook another minute. Add remaining oil, then add mushrooms, sherry, soy sauce, and garlic and cook about 1 minute. Then add rice and cook about 3 minutes, stirring frequently. Slice the green onions, using the white and green tops. Add to skillet and stir well. Add peas and sesame oil and cook, stirring 1 minute more to heat through.
