Chipotle Cheddar Mashed Potatoes - TastyPlanner.com
Smokey and cheesey
1 can chipotle chiles in adobo sauce
1 pounds cubed Yukon gold potato
4 garlic cloves, peeled and minced
1/2 cup shredded extra sharp cheddar
1/4 cup milk or cream
2 Tablespoons tablespoons butter, softened
salt and pepper, to taste
1. Remove 2 chiles and 1 1/2 tablespoon adobo sauce from can. Chop chile to measure 1 tablespoon. (Add more chiles and sauce depending on taste, but be careful not to make potato mixture too wet) Reserve remaining chiles and adobo sauce for another use.
2. Place potato a large Dutch oven; cover with water, and bring to a boil. Cook 20 minutes or until potato is tender. Drain. Return potato mixture to the Dutch oven.
3. Add chopped chiles and adobo sauce, cheese, and remaining ingredients. Mash to desired consistency with a potato masher. Cook for 3 minutes over medium heat or until thoroughly heated, stirring constantly.
