A baked custard with fruit that I often eat for breakfast
Ingredients
1 1/4 cup milk
1/3 cup sugar
3 eggs
1 t. vanilla
1/8 tsp. salt
1/2 cup flour
3 cups fruit
1/3 cup sugar, reserved
powdered sugar
Instructions
Preheat oven to 350.
Using a blender, blend the milk, sugar, eggs, vanilla, salt, and flour. If you are using watery fruit, you should add a little extra flour.
Pour a 1/4 in. of batter into a buttered 7 or 9 cup baking dish, such as a casserole dish or a 9-in cake pan. Place in the oven until the batter is slightly set.
Arrange the fruit over the batter and sprinkle on the last 1/3 cup of sugar. Pour the remainder of the batter.
Replace in oven and cook from 45 min to an hour. The clafouti is done when it’s puffed, brown, and a knife plunged in comes out clean. Sift over with powdered sugar and serve warm.
