Classic recipe for banana bread! One of the best recipes for this all-american breakfast pastry!

Ingredients
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
pinch of salt
1 1/2 cup of flour
Instructions
Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve. I sometimes add 1/2 a cup of chocolate chips! yum!

I just made this with 3 very unappetizing bananas. May not have needed the full hour, but still came out very delicious! I will definitely make this again.
This really is the greatest recipe. I agree that you only need 45 minutes for it to be fully cooked through without drying.
PS I used the food processor bread blade to “smash” the bananas and it worked quite well.
This recipe is missing one key ingredient: walnuts!
I made some adjustments with my bread. The first was substituting the full cup of sugar for 1/4 cup of raw sugar, 1/4 cup brown sugar, and 1/4 cup of dark maple syrup. Did half white half wheat flour. Added a pinch of nutmeg, approx. 1 teaspoon of cinnamon and some walnuts. I dusted the top before baking with some remaining walnuts and a touch of brown sugar.
I don’t like things too sweet and this had the perfect blend of subtle flavors and sweetness.
Putting pecans in mine tonight to try to substitute for the walnuts… but I’m too scared to try the brown sugar! :)
