Great cheesecake. You can top it with anything and it’s fantastic!
1 1/4 cup graham cracker crumbs
1/4 cup sugar
1 teaspoon ground cinnamon
1/4 cup butter ; melted
4 (8oz.) packages cream cheese ; softened
1 cup sugar
2 teaspoons lemon juice
1 teaspoon vanilla extract
sliced fresh strawberries
strawberry glaze or pie filling
Preheat oven to 300 degrees. Spray 9 inch pie pan with cooking spray. In a medium bowl, combine all crust ingredients; blend well. Press firmly on bottom of prepared pan.
In a separate bowl, beat cream cheese at low speed just until smooth (about 30 seconds). Scrape bowl. Add sugar, beat at low speed just until blended (another 30 seconds). Scrape bowl again. Add lemon juice, vanilla and 1 egg; beat at low speed until egg is blended. Scrape bowl again. Add remaining eggs, one at a time, beating until only just blended. SCRAPE BOWL AFTER EACH ADDITION.
Pour filling into pan over crust. Bake 1 hour and 15 minutes until firm except for the very center. Cool completely. Cover; refrigerate at least 4 hours.
Blend topping ingredients. Place topping on finished cheesecake and serve.
