Protein packed pancakes!

Ingredients
3 eggs
1 cup cottage cheese
1/2 cup whole-grain pancake mix
1 tbsp shredded unsweetened coconut
2 tbsp virgin coconut oil
Instructions
Whisk the eggs in a large bowl an dmix in the cottage cheese. Stir in the pancake mix and shredded coconut.
Heat the coconut oil in a nonstick skillet over medium-high heat. Drop the batter into the skillet (2 tablespoons per pancake) and cook until the underside is set and lightly colored and bubbles form on top, then flip and cook until set and lightly colored on the other side.
Serve with a little pure maple syrup or brown rice syrup and sliced strawberries or bananas.
