A cake made with instant coffee.
2 cups milk
2 tablespoons instant coffee
3/4 cup sugar
2 envelopes unflavored gelatin
6 egg whites
Scald milk. Dissolve coffee, 1/4 cup sugar and gelatin in scalded milk. Chill until slightly thickened. Beat 4 of the egg whites stiff; fold in coffee mixture. Pour into mold; chill until firm. Beat remaining 2 egg whites, gradually adding the remaining sugar, and continue beating until stiff. Spread over mold with spatula, bringing to edges to seal.
