Ingredients
2 cups Tomatoes
1 1/2 tbsp lemon juice
1/4 cup fresh basil
1/2 cup sun-dried tomatoes, soaked for an hour
1 tsp italian herbs
1/3 clove garlic (optional)
1/4 tsp sea salt
1 tbsp chili powder (or to taste)
1/8 tsp Cumin
1 cup cauliflower, diced
2 tbsp onions, chopped
2 cups zucchini, diced
1 cup red bell pepper, diced
1/2 cup mushrooms, sliced (optional)
Instructions
Blend first 9 ingredients together in blender until you have a thick tomato sauce. Add water or more fresh tomatoes if too thick.
Mix remaining ingredients in a bowl. Add the sauce and stir. Serve right away, or make a few hours ahead to allow the flavors time to blend.
