Cornbread
Ingredients
1 cup cornmeal
1 cup flour (unbleached)
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons brown sugar
1 cup milk
1 egg
1/4 cup butter
Instructions
Pre-heat the oven to 450 degrees F. Mix the dry ingredients in a large bowl. Combine the milk and egg in a small bowl, using a fork or whisk. Place the butter in a 10 inch cast-iron skillet, and put the skillet in the oven, allowing the butter to melt. After the butter as melted, add it to the milk and egg mixture. Stir and then add to the dry ingredients. Gently mix together the wet and dry ingredients with a wooden spoon, until they are incorporated evenly. Pour the mixture back into the cast-iron skillet and place in the oven for 15-20 minutes, or until the surface is golden brown.
