Cornmeal Pancakes - TastyPlanner.com

Nice alternative to flour pancakes.
Ingredients
1 c cornmeal
2 tsp baking powder
1/2 tsp salt
1 cup flour
1/4 c sugar
1/2 tsp baking soda
2 eggs
1/4 c vegetable oil
2 c water
2/3 c powdered milk
1 T lemon juice concentrate
Instructions
In a medium bowl add cornmeal, baking soda, baking powder, salt, flour, sugar. Whisk to Combine. In a separate bowl beat eggs, oil, water, powdered milk and lemon juice until combined. Slowly add cornmeal mix to the egg mix until well incorporated.
Add 1/4 c of mixture to a preheated skillet (preheat on medium with 1 T or less of oil to coat the bottom).
Wait for bubbles to appear around the edges and in the middle.
Flip and cook remaining side for 30-45 seconds or until lightly browned.
Serve with your choice of syrup.
