Couscous with Chicken and Roasted Vegetables - TastyPlanner.com

Ingredients
For Couscous:
1 and ¼ cup of water
1 Tablespoon of butter
1 Teaspoon of Crushed Red Pepper
1 Teaspoon of parsley
1 ½ cups rotisserie chicken
1 zucchini, cut into about 1 inch pieces
1 yellow squash, cut into about 1 inch pieces
3 handfuls of grape tomatoes
2 garlic cloves, chopped
shredded parmesan cheese
salt and pepper
Instructions
Preheat oven to 425 degrees. Add zucchini, squash, and tomatoes to jelly roll pan. Toss in olive oil, salt and pepper. Sprinkle with garlic and parmesan cheese. Bake for 25 minutes or until vegetables are evenly roasted.
Bring water, butter, and salt to a boil. Add couscous and herbs and cook for about 5 minutes. Turn off heat and set covered couscous aside.
Combine couscous, roasted vegetables with oil, and chicken. Add a little bit more olive oil if needed before serving. Top with Parmesan cheese.
