Thin, delicious crêpes!
Ingredients
1 cup of flour
1 1/4 cups of milk
3 large eggs
1 tbsp. sugar
2 oz. melted butter
vanilla extract
Instructions
Put eggs and sugar into a large bowl; whisk.
Add half of the milk into the bowl; whisk.
Add half of the flour; whisk well.
Add second half of milk; whisk.
Add second half of flour; whisk well.
Add a splash of vanilla; whisk well.
Heat and grease a small pan.
Ladle the batter into the pan in small amounts – enough each time for a good-sized crêpe. Tilt the pan to make the crêpe circular. Let it sit until the edges start to rise, or the bottom of the crêpe begins to darken. Flip the crêpe and cook the other side so both sides are cooked evenly.
Use a spatula to remove the crêpe from the pan, and place it on a plate or into a container. Grease the pan again if necessary, and then add more batter to make your next crêpe. Repeat this process until all batter is gone.
Serve hot with jelly, powdered sugar, or melted chocolate.
