Cranberry Baked Oatmeal - TastyPlanner.com

Like eating desert for breakfast.
Ingredients
1/4 cup grapeseed oil
1/2 cup natural sweetener
1 egg
1 1/2 cups rolled oats
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 cup soy milk
1/2 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup fresh frozen premium cranberries
Instructions
Preheat oven to 350°F.
Combine oil, sweetener and egg.
Add rest of ingredients and mix well.
Pour into a greased 9 or 10" pie pan (I use a 10", but think 9" should be okay).
Bake for 25-35 minutes.
Serve fresh and warm from the oven with soy milk and additional cinnamon and natural sweetener, if desired.

This was delicious! It was a little too sweet for my taste (I think because I substituted bananas and strawberries for the cranberries). But I ordered a ton more oats, frozen fruits (peaches, blueberries raspberries) so I can make it again and again. I highly recommend this recipe.
