Cream of Mushroom Soup - TastyPlanner.com

Okay so not exactly gourmet, but for that occasional quick and easy meal that calls for cream of mushroon soup. I needed a gluten/corn/soy free option. This turned out great to use in recipes.

Ingredients
4 C. Organic Milk 2%
1/4 C. Sweet Cream Butter
1 tsp. salt
1 tsp. onion salt
1 tsp. thyme
1/2 tsp. basil
1/2 C. tapioca flour
2-3 chopped mushroom
Instructions
Mix all ingredients EXCEPT tapioca flour and mushrooms in saucepan. Heat on low, whisking while butter melts. Once melted slowly add the flour until smooth. Add mushrooms and continue to whisk until creamy.
Makes equivalent of about 3 10 oz. cans.
