Creamy Wild Rice Soup - TastyPlanner.com

soup, Voeller family favorite, good w/ thick slice of bread
can be made ahead but may need extra liquid added as rice absorbs some of the broth

Ingredients
1/4 c butter
1 lg onion, chopped
5-8 carrots, diced
1 8oz pkg mushrooms, sliced
3 stalks celery, sliced
1/2 c w. wheat pastry or spelt flour
6-8 c veg stock
2 c dry wild rice, cooked and drained
1 t salt
1 tsp dry mustard (opt)
1/4 tsp curry powder
1/4 tsp white pepper
1/8 tsp cayenne pepper
2 c rice milk or milk
1/2 c chopped parsley
Instructions
1. In a lg. saucepan, melt butter
2. Add onions and cook for about 5 min or until tender
3. Add carrots, mushrooms, and celery; cook for 2 min
4. Stir in flour, then add vegetable stock, stirring for 5 min on high
5. Stir in the wild rice and spices
6. Reduce heat and stir in milk; cook until thoroughly heated
7. Add parsley and serve
