Irish Stew
Ingredients
2 lb boneless lamb, cubed
2 carrots, sliced
1 onion, diced
3 med sweet potatoes diced
1 bay leaf
2 c water
1/4 c dry small pearl tapioca
1 pkg froz peas
Instructions
Spray cooker w Pam.
Place cubed lamb on bottom and season w s&p
Add carrots, onions, potatoes, peas and bay leaf in layers.
Stir in water and tapioca
Cook on high for 90 mins, then low for 8 hours.
Remove bay leaf before serving.
