Chicken Gizzards will turn out tough and chewy if they aren’t boiled first. Boiling loosens the sinews and makes the gizzards melt in your mouth. Fried Chicken Gizzards are great dipped in ranch or chipotle sauce on the side.

2 pds of Chicken Gizzards
2 eggs beaten
2 cups of flour
2 Tbsp salt
1 tsp pepper
2 cubes chicken bouillon or Swanson Chicken Stock
Combine water and chicken boullion or stock in a large boiling pot. Boil Gizzards for 60 minutes. Preheat Deep Oil fryer. Beat the eggs in a bowl. In a mixing bowl combine the flour, salt and pepper. Dip the cooled Gizzards first in the egg and then the flour mixture and coat them all over. Fry in the deep oil fryer until golden brown. Drain on a paper towel and sprinkle with sea salt. Serve with ranch dressing or chipotle sauce for dipping.
