Desperate Housewife's Meatless "Meatloaf" - TastyPlanner.com

This veggieloaf is a rib-sticking, heart-warming take on the meat loaf that Housewives (and Househusbands) have been cooking for years in America. Barbeque-y and smoke-y. Tastes great with a side of green beans, and guarantees to bring those cute neighbors from across the hall over to your kitchen.
Note: I couldn’t separate the ingredients for the BBQ sauce and the “meatloaf”, but the ingredients for the “meatloaf” begin with 1 block tofu. All ingredients above 1 block tofu are for BBQ sauce.
Ingredients
2 cups ketchup
1/2 cup water
1/4 cup wine or rice vinegar
1 tablespoon soy sauce (tamari preferably)
1 tablespoon chili powder
1 tablespoon minced onion
1 clove garlic, minced
1 block tofu (about 15 ounces)
1 block tempeh (about 8 ounces)
1/2 can black beans
1 medium sized zucchini
1 stalk of celery
1/4 yellow onion
Instructions
Barbeque Sauce:
1: In a small sauce pan, saute onion and garlic in a small amount of oil until golden colored.
2: Add ketchup, water, vinegar, soy sauce, chili powder, salt and pepper. Reduce heat and let simmer for a few minutes, stirring constantly to prevent pesky, bubbling splatters.
3: Remove from heat and smell that great BBQ smell!
“Meatloaf”:
1: Press tofu, then crumble it into a large bowl. Crumble and add tempeh as well. Mix with hands to really get the housewife/househusband sensation.
2: Add about 1/2 the BBQ sauce and mix well with tofu and tempeh. Let sit.
3: Saute onion in about a tablespoon of oil. Add zucchini and celery. Saute until zucchini and celery are tender but not super soft. Remove from heat.
4: Add black beans and about a cup (eyeball it) of bread crumbs to tofu/tempeh mixture. Add vegetables. Top it all off with a little more BBQ sauce.
5: Mix well, making sure everything is covered with BBQ sauce.
6: Place in a greased loaf pan. Pour and spread the rest of the BBQ sauce over the top. Cover with tinfoil.
7: Is your mouth watering yet?
8: Bake at 350 degrees for 30 minutes. Remove tinfoil and bake another 30 minutes until edges of loaf look somewhat crispy.
9: SERVE AND ENJOY!
