Ingredients
4 whole boneless skinless chicken breast halves
2 tablespoons butter
1/2 cup onions ; thinly sliced
1 cup fresh mushrooms ; sliced
2 Cloves Garlic ; minced
6 ounces artichoke hearts ; marinaded
2 tablespoons dijon mustard
1 cup dry white wine
1/2 cup heavy cream
2 tablespoons fresh parsley ; chopped
Instructions
In a saute pan, brown the chicken breasts in butter. remove from pan and keep warm. Add onion, mushrooms and garlic and saute lightly. Add artichoke hearts and mustard. Add wine; allow to simmer until reduced by half. Stir in cream. Return chicken to saute pan, cook 5 to 10 more minutes or until no longer pink in the middle. Check for doneness. Remove chicken to serving dish. Pour sauce over and sprinkle with parsley.
