Double Chocolate Cupcakes - TastyPlanner.com
This is a chocolatey cupcake that isn’t too sweet. You can mix this by hand mixer or stand mixer.
1 stick unsalted butter (softened) (1/2 cup)
1 cup granulated white sugar
2 large eggs (room temperature)
1/2 tsp vanilla extract
1 1/3 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup Cocoa powder
2/3 cup milk
1 1/2 sticks unsalted butter (softened) (3/4 cup)
1 1/2 cups icing sugar (a.k.a powdered or confectioners sugar)
4 ounces semi-sweet or milk chocolate
Preheat oven to 350F
Cream the butter and sugar together
Add in the eggs 1 at a time
Scrape down the sides if necessary
Add in vanilla
In a separate bowl mix together the flour, baking soda, baking powder and salt together. Sift in cocoa powder
Alternately add in flour mixture with milk
Scoop into 1 lined muffin pan with an ice cream scoop
Bake in the oven for 14 – 20 minutes
For the frosting melt the chocolate in a double boiler and then let in come to room temperature.
Cream the butter and sugar together until creamy.
Add in cooled chocolate.
Mix for 5 minutes until light and fluufy and very thick.
Pipe or spread frosting onto cupcakes and decorate to your hearts desire.
