Early Autumn Salad - TastyPlanner.com

A great salad to transition from late summer into early Autumn with a homemade cafe style dressing.
Ingredients
Fresh organic arugula lettuce
1 medium sized heirloom tomato (slightly soft to the touch but not too soft)sliced into wedges
1 red onion sliced thinly
Roasted pumpkin seeds seasoned with salt
For the dressing:
1 garlic clove smashed
1 teaspoon dijon mustard
1 tablespoon balsamic vinegar
splash soy sauce
Salt and freshly ground black pepper
3 tablespoons olive oil
I had a little left over bacon fat I added for flavor but optional
Instructions
To make the salad dressing take the smashed garlic and rub the inside of the mixing bowl (preferably a wood bowl) then leave the garlic in. Add to it whisking the mustard, balsamic vinegar and soy sauce then salt and pepper to taste. I added some left over heated bacon fat for extra flavor. Then whisk in 3 tablespoons of olive oil.
Combine all the ingredients and toss with the dressing. Serve immediately.
