Easy Bean Chili - TastyPlanner.com

Ingredients
1 onion, chopped
Dash crushed red pepper
1 Tbsp. oil
1 can black beans, rinsed
1 can (540 mL) chili-style stewed tomatoes
1 cup frozen corn, thawed
1/2 cup Tex Mex Shredded Cheese
1/4 cup light sour cream
Instructions
COOK onions and crushed pepper in hot oil in large saucepan on medium-high heat 3 min. or until onions are crisp-tender, stirring frequently.
STIR in beans, tomatoes and corn. Bring to boil; simmer on low heat 7 min. or until heated through, stirring frequently.
SERVE topped with cheese and sour cream.
Variation:
Prepare using 1 cup frozen corn, and substituting canned kidney or white beans for the black beans.
