Easy Chicken Parmigiana - TastyPlanner.com

This is out of a healthy cookbook but I nixed all the things that made it healthy and replaced it with all the things that make it GOOD!
Ingredients
1 pack boneless, skinless chicken breasts
1 jar of your favorite spaghetti sauce
2 c. mozzarella cheese
2 c. freshly grated Parmesan
1 cup Bread crumbs
2 tbls olive oil
Instructions
Preheat the oven to 350 degrees
Mix together bread crumbs and 1 cup of parmesan cheese and place in shallow dish.
Wash and prepare chicken breasts. Place olive oil in separate dish and season with salt and pepper. Dip chicken in olive oil, then in bread crumb mix to create breading.
Next, cook chicken. I’m a fan of the good ole’ George Foreman Grill if you have one. It creates a perfect crust. If not, a skillet will do.
While the chicken cooks, put half the spaghetti sauce in a square casserole dish. If you have plain spaghetti sauce, by all means, season it, first!! Garlic, basil, oregano would do fine. Place half of the mozzarella as well.
When the chicken is no longer pink in the middle, move it to the casserole dish. Top with remaining cheeses and bake for 20-25 minutes or until cheese is melted.
Serve atop spaghetti and with a lovely red wine!
