A very simple, one-pot baked chicken dish. It can be assembled and kept covered in the refrigerator up to 24 hours in advance, making it an easy after work meal.

Ingredients
4 boneless, skinless chicken breasts
3 cloves garlic, crushed
2 tsp Greek seasoning (or your own combination)
2 tomatoes, diced
1 small red onion, sliced
1 each red and green pepper, sliced
1/2 cup whole pitted Greek olives
1 cup crumbled feta cheese
Instructions
Preheat oven to 350F.
Place chicken in single layer in a glass baking dish. Add remaining ingredients in order listed.
Bake covered for 20 minutes. Uncover and bake an additional 15 minutes.

I love this recipe! It’s easy, and I like the fresh ingredients. However, I recommend adding a little salt and olive oil to bring out the flavors. Also, I think the temperature needs to be hotter. Maybe 425F? I cooked at 350F and the chicken was was not cooked at all. My husband and I increased the temp to 425F to finish it off.
