Easy Moussaka (Eggplant - Tomato) - TastyPlanner.com

Alternative for the traditional greek recipe, easier to prepare, but very tasty as well.
Ingredients
2 big eggplant
Tomato sauce
Spices (grated black pepper, Oregano)
olive oil
grated Parmesan cheese
Instructions
Preheat oven to 200 degrees.
Cut the eggplant into slices (lengthwise). Spray with a
bit of lemon to prevent them to get brown.
Spray a baking tray with a bit of olive oil and spread it on the surface. Then extend the eggplant slices with a bit of oil and pepper and salt above. Place in the oven for about 10 minutes. Turn the eggplant and bake another 5 minutes, or until they are soft.
In a baking dish, extend a base of tomato sauce. Then we will go alternating layers of roasted eggplant and tomato sauce with a little oregano.
Finish with a layer of tomato sauce and introduce it back into the oven for 10 minutes. Sprinkle grated cheese over and gratin until cheese gets brown.

If you’re new to cooking, be careful with the tomato sauce layers. It’s very easy to be tempted to make them as thick as the eggplant ones. Just make them a lot thinner.
When I followed this recipe, the eggplant was a little hard at the end of suggested time. Cook time should be longer and temperature should be around 300 degrees. I left the bake in the oven for around 30 minutes and it was just perfect. Tasted great after a few alterations! Thank you!
