Emeril's Ginger Shrimp Salad - TastyPlanner.com

1 pound shrimp (peeled and deveined)
2 teaspoons Emeril Essence spice mix (homemade)
1 oz rice noodles (long and thin variety)
1 T vegetable oil
1 1/2 t sesame oil
3 T minced ginger root
1/4 c rice wine vinegar
2 T brown sugar
1 c diced fresh mango (2 mangos)
1/4 c chopped green onions (scallions)
3 T Chopped Fresh Cilantro
1 large head bibb lettuce (Boston, not iceberg)
1/2 c thinly sliced cucumbers (1 cucumber)
Peel and devein shrimp; season with Essence spice mix.
In large skillet, heat vegetable oil and 1/2 t sesame oil over high heat. Add ginger, garlic, shrimp, and cook quickly, stirring til shrimp are pink. Remove from pan with slotted spoon.
Add vinegar and 1/4 c liquid to deglaze pan over medium heat. Add sugar and stir to dissolve; cook and reduce by half. Add the remaining 1 teaspoon sesame oil, mango, green onions; stir to warm and wilt. Remove from heat, add shrimp and ginger mixture and cilantro. Stir to warm through. Serve atop lettuce, top with cucumber slices and cilantro.

1 T black pepper
1 T onion powder
1 T cayenne pepper
1 T dried oregano
1 T dried thyme
