5-6 c flour (wheat, white, or some of both)
2 Tbsp dry yeast
1 Tbsp sugar
1/4 tsp baking soda
1/2 tsp salt
2 c milk (can use soy)
1/2 c water
Combine 3 c flour, yeast, sugar, salt, and soda. Heat combined milk and water until very warm (do not overheat). Add to dry mixture and beat well. Stir in rest of flour to make batter stiff.
Spoon into 2 loaf pans that have been greased and dusted with corn meal. Sprinkle top with corn meal. Cover and let rise in warm place until double in size.
Bake at 400 for 25 minutes.
NOTES: I just mixed this up for the first time and the batter is VERY stiff, and I didn’t use the maximum amount of flour. It was really hard to shape into the classic muffin shape (we prefer buns over sliceable bread). We’ll see how it turns out.
