Falafel Dinner Loaf - TastyPlanner.com

Dried fruit provides a marvelous sweet accent in this easy-to-make loaf. We think it’s also terrific served cold for warm-weather dining.

Ingredients
1 package (6 ounces) falafel mix
1/2 cup shredded zucchini
1/2 cup dried fruit bits (mixed dried fruit)
1/4 cup coarsely chopped toasted pecans
2 tablespoons thinly sliced green onions and tops
2 eg beaters (1/2 cup)
1/4 cup reduced fat plain yogurt
Instructions
Prepare falafel mix with water according to package directions; mix in remaining ingredients, except yogurt. Pack mixture into lightly greased 7 1/2 × 3 1/2 inch loaf pan.
Bake at 350 until mixture is set, about 30 minutes. Invert loaf onto serving plate and serve with dollops of yogurt.
