Pronounced “fay-ZHWAH-dah” – a famous Brazilian dish. This is based on a version from Cooking Light. Served with rice, feijoada is traditionally accompanied by collard greens (sliced thin and steamed) and orange slices, for bitter and sweet counterpoints.
Since ground turkey tends to come in 20 oz packages and sausage links in packs of 10-12, you may find it convenient to double the recipe and freeze some of it.
Ingredients
10 oz ground turkey (can use ground beef)
5 precooked sausage links (can use beef or vegetarian links)
1.5 tbsp olive oil
1 onion, large yellow, chopped
4 garlic cloves, slivered or minced
2 15-oz cans black beans
1 cup water
1/2 cup red wine vinegar
1/2 tsp hot sauce (e.g. Sriracha - "rooster sauce") with extra to taste
2 tsp ground cumin
1 tsp salt
1/2 tsp ground black pepper
Instructions
Brown turkey and set aside. Prepare sausage links (thaw if frozen, or cook if a precooked variety could not be found) and cut into small pieces, then set aside. Chop vegetables.
Heat oil in pan over medium heat. Add onion and garlic; saute 10 minutes or until onion is tender. Add turkey, links, and cumin to pan and saute 1 minute.
Add beans, water, salt, pepper, hot sauce, and vinegar and mix thoroughly. Simmer, stirring occasionally, until most of the liquid is absorbed / boiled off, 5-10 minutes.
Serve over rice.
