Figs with Pork Loins - TastyPlanner.com

Found this recipe online when trying to find something to do with my figs from the market. The sauce is beautiful and could be adapted to go with other meats as well. Steam some green veggies for a complete meal.

Ingredients
4 Pork loin steaks (or however much meat you can imagine eating)
4 Fresh figs, quartered
2 Shallots or green onions, cut finely
1.5 Tbsp balsamic vinegar
1/2 cup chicken broth
1/4 cup sour cream
olive oil
1 Tbsp butter
salt and pepper
Instructions
Saute pork loins with olive oil until brown on all sides. Transfer to pre-heated oven to keep warm.
In the same pan, melt 1 tablespoon butter and saute shallots for a couple of minutes.
Add 1 tablespoon balsamic vinegar and simmer until vinegar evaporates.
Add chicken broth and simmer for about 4 minutes or until liquid is reduced by half.
Add figs and sour cream and simmer for about 4 minutes or until sauce thickens.
Add remaining 1/2 tablespoon vinegar and any accumulated juices from the resting pork. Season sauce to taste with salt and pepper
Arrange pork on plates and spooon sauce over the top.
- Note: We serve ours with sauteed brussel sprout leaves.
