Fish & orange soup - TastyPlanner.com

This light, fragrant citrus broth, with chunks of firm white fish, makes a stylish light meal, served with chunks of crusty bread.

Ingredients
2 tbsp sunflower oil
1 onion, finely chopped
2 garlic cloves, crushed
2 l fish stock
1/2 tsp sweet paprika
1 tbsp tomato puree
500 g firm white fish fillets, skinned and cubed
1 tsp finely grated orange rind
2 oranges, juiced
1 handful chopped fresh parsley
salt and pepper
Instructions
Heat the oil in a large saucepan. Add the onion and garlic, and cook for about 4 minutes. Stir in the stock, paprika, and tomato purée, and simmer for about 5 minutes. Add the fish, orange rind, and juice, and simmer for 2-3 minutes, until the fish is just cooked.
Season the soup with salt and pepper to taste, then ladle it into serving bowls and scatter with fresh parsley. Serve immediately.
