easy to make and really yummy!
Ingredients
4 1/2 cups turbinado sugar(can be found at walmart, Florida crystals brand)
12 ounces coconut milk(pure coconut milk with nothing added, i.e. Thai kitchen brand)
18 ounces vegan chocolate chips(I use Enjoy Life! from Vitamin Cottage)
1 cup extra virgin coconut oil(Extra Virgin gives it the best flavor)
3 tablespoons pure vanilla extract(not imitation)
1 pinch sea salt
1 cup nuts, of your choice or raisins
Instructions
Bring to a boil the sugar and milk, and let it boil exactly six and a half minutes, stirring constantly. A gas stove works best so you don’t burn it or cause it to boil over.
In another pan or bowl, have the chocolate, oil, vanilla extract and salt ready.
Pour hot mixture of sugar and milk over the other ingredients, and blend together using a high powered hand mixer or stand mixer until all the chocolate has melted and starts to appear glossy.
Add nuts or raisins and fold into fudge mixture(or mix for 30 seconds on low)
Pour into pan and set for six hours in the fridge until the fudge has set.
makes 36-40 servings
