These taste as light and fluffy as a doughnut – but they’re a muffin!
Ingredients
1/3 c shortening
1/2 c sugar
1 egg
1 1/2 C flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/2 c milk
1/2 c sugar
1 tsp cinnamon
1/2 c melted butter
Instructions
Heat oven to 350.
Grease 12 medium muffin cups. Do not use muffin papers.
Mix thoroughly the shortening, 1/2 c sugar, and the egg. With a fork, stir in flour, baking powder, salt, and nutmeg alternately with the milk. Do not overmix.
Fill muffin cups 2/3 full. Bake 20-25 minutes.
While the muffins bake, mix 1/2 c sugar and 1 tsp cinnamon in a dish. Pour melted butter on a plate. Immediately after taking the muffins out of the oven, roll them in the butter and then the cinnamon-sugar. Serve hot.
