Oh so snackable and great to top casseroles.
Ingredients
1 small onion
1 cup milk
1 cup self-rising flour (or all-purpose if that's what you've got)
peanut oil (or other non-smoking oil) for frying
salt
Instructions
Slice the onion into thin rings. “Thin” is the key word; “rings” is not. If you end up with little strips sometimes, that’s fine too.
Soak the onion slices in milk for about five minutes.
Then use a fork to run the rings through the bowl of flour to coat evenly.
Fry in batches, stirring as needed to brown evenly. I use my wok and a couple cups of oil, but I’m sure a frying pan would do too. Drain on paper towels and season with salt as needed.
Store in air-tight container. This recipe makes enough to cover a medium-sized casserole. They’re best fresh and can lose crispness if left out.
