Healthy macrobiotic desert from ‘A Romantic Meal by Bita Hunt’

Ingredients
12 oz. whole wheat couscous
3 cups water
1/3 cup dried cranberries
2 tb. extra virgin olive oil
Juice of 1/2 lemon
1/4 cup slivered almonds, toasted
1/2 tea. umeboshi plum vinegar
2 tb. Italian parsley, minced
sea salt and freshly ground black pepper to taste
Instructions
Bring water to a boil over high heat with a pinch of salt. When boiling, add in couscous. Boil on high heat, uncovered until all the water is absorbed. Turn off flame and scatter cranberries on top. Cover with lid and let sit, undisturbed for 5 minutes. Fluff with a fork into a large serving bowl. Add in remaining ingredients and toss well to combine. Taste for seasoning.

I didn’t put forth the effort to track down plum vinegar. I suppose plum wine would’ve done the trick, but it’s like $20 a bottle in my grocery store. I used white balsamic instead and it still turned out quite tasty. Pine nuts and chopped dried apricots would be another good combination in this recipe.
