little bitty pastas with fruit. Could also replace couscous with rice.
Ingredients
1/2 sweet onion, chopped fine
1 tsp olive oil
1/4 cup juice and 1/2 tsp zest)
1 cup chicken stock
1/4 cup white wine
1 cup cous cous
1 small apple, half-inch dice
1/2 cup dried cranberries
Salt and pepper to taste
pinch cinnamon
Instructions
1. Cook onions in oil over low heat, stirring frequently, for 5 to 10 minutes, softening and slightly caramelizing.
2. Add liquids and zest and bring to a boil.
3. Add couscous and fruits, season with salt, pepper, and cinnamon.
4. Cover and remove from heat. Let sit 5 minutes. Fluff with a fork.
