Garlic Chicken in Balsamic Vinegar
4 X boneless chicken breasts
5 cup flour
2 teaspoons olive oil
8 cloves garlic, mince
1 cup chicken broth
33 cup balsamic vinegar
2 tablespoons water
1 tablespoon corn starch
Dredge chicken in flour, shake off excess.
Heat oil in large, heavy non-stick pan. Add chicken when oil is hot. Cook on one side for 2-3 minutes or until golden. Add garlic. Spray top side of chicken with vegetable oil spray. Turn chicken and continue cooking 2-3 minutes or until golden.
Add broth, balsamic vinegar, and pepper. Reduce heat to med-low and cook covered for 5-10 minutes. Remove chicken from skillet and keep warm.
Pour water into a cup and add cornstarch, stirring until it dissolves. Add to skillet and boil for 1-2 minutes or until thick and smooth. Pour sauce over chicken.
