Garlic Cream Pasta with Squash - TastyPlanner.com
Combine a delightful garlic cream sauce with mafalda pasta and fresh butternut squash.

1 Medium Butternut Squash
4 tbsp butter
2 tbsp butter
1+ cloves garlic, minced (you can never have enough!)
1 medium onion, chopped
3 cups baby spinach
1 cup sundried tomatoes, chopped
1 cup cream
1 cup whole milk
2 tbsp 1/3 less fat cream cheese
1/4 cup parmesan asiago mix
2 cups mafalda noodles (or as much as needed)
Peel medium butternut squash and chop into 1" pieces. Put in a baking pan with 4 tbsp of butter. Microwave for 10-15 minutes or until throughly cooked.
Over medium heat, add 2 tbsp butter, minced garlic, and onion. Cook for 5-7 minutes or until tender.
Add baby spinach and sundried tomatoes to garlic butter mix. Cook 2-3 minutes or until spinach is fully cooked. Remove from heat.
In a 3 quart saucepan, combine cream and whole milk. Whisk in the cream cheese and parmesan asiago mix until well-blended.
Add garlic/onion mixture to sauce. Cook for about 5 minutes or until it thickens slightly. Remove from heat.
Boil pasta and strain. Serve pasta in a bowl with sauce. Add the cooked squash on top.
Goes great with a caesar salad and garlic cheese bread!
