Delicious potatoes packed with a garlicky punch! This dish gets tons of flavor from just 5 ingredients, making it simple to prepare and budget friendly.
Ingredients
4 red potatoes, washed and dried
3 Tbsp canola oil
1 Tbsp kosher salt
1 tsp Freshly ground black pepper
3 cloves garlic, peeled and thinly sliced
Instructions
Preheat oven to 450 degrees Fahrenheit.
On flat surface and starting from narrowest end of one, cut a slit in the potato, stopping about 1/4 inch from the bottom. Continue across the whole potato, leaving about 1/4 inch in between each of the cuts. Repeat with other 3 potatoes.
Working carefully, insert garlic slices deep into each of the slits in the potatoes until all garlic is used or for less garlic, until each slit has one slice of garlic inserted.
On baking sheet, toss potatoes in oil (garlic slices will not fall out if properly inserted). Sprinkle with salt and pepper and place in oven, slit side up and bake for 45-55 minutes or until skin is slightly crisp and potatoes are fork tender.
